Ingredients

½ medium sized avocado
1 yellow, green and red bell peppers (any two can work still)
1 cucumber
1 tomato or a handful cherry tomatoes
¼ purple cabbage
¼ juice of freshly squeezed lemon
Salt to taste

Method
  1. Wash all the ingredients
  2. Cut the cabbage and keep in a bowl
  3. Chop the cucumber, tomato and bell peppers and add them to the cabbage
  4. Cut the avocado (remove the seed) and add to the salad, mix well
  5. Sprinkle lemon and some salt and toss them well
  6. Serve
